Almond Butter Fudge

1/2 cup (1 stick) unsalted butter, melted but not hot
1/2 cup heavy cream
1/4 tsp sea salt
3/4 tsp stevia (equivalent to 3/4 cup sugar, see Resources)
6 drops Cookies & Cream
7 oz (by weight) creamy almond butter
Almond butter may be purchased from Zinke Orchards or in-store at Costco under the Kirkland brand for half the price. Select an almond butter that has one ingredient — dry roasted almonds. Sometimes natural oil separation occurs and the best way to resolve this issue is to scoop the almond butter into a bowl, mix it with a hand mixer (2 beaters), and store the results.
Combine all ingredients except for almond butter and mix with a hand mixer (2 beaters). Then add almond butter, blend until smooth, and refrigerate.
If you are using Kirkland almond butter that comes in 27oz jars I suggest you double the recipe: 1 cup butter, 1 cup cream, 1/2 tsp salt, 1 tsp stevia, 12 drops Cookies & Cream, and 1/2 jar (13 1/2 oz ≅ 14 oz) of almond butter.
